
Pumpkin and white chocolate make a delicious combination in these drop cookies. Melt additional chips and drizzle over the baked cookies, if you like.
Preheat oven to 350 degrees. Lightly grease two cookies sheets.
With an electric mixer, blend sugar and butter in a large bowl until thoroughly mixed. Add egg, vanilla, and pumpkin, beating well.
Stir together flour, baking soda, baking powder, nutmeg, cinnamon and ginger in a separate bowl. Add to sugar and butter mixture and blend well. Stir in white chocolate chips. Use tablespoon to round off each cookie and place about 1 1/2 inches apart on cookie sheets. Bake about 17 minutes, or until golden around edges. Remove and cool on wire racks.
Notes:
Drizzle with white chocolate icing if desired.
