White Chocolate-Pumpkin Cookies

Pumpkin and white chocolate make a delicious combination in these drop cookies. Melt additional chips and drizzle over the baked cookies, if you like.
Ingredients
- 1 1/2 cups sugar
- 1/2 cup butter, softened
- 1 egg
- 1 teaspoon pure vanilla
- 1 cup canned pumpkin
- 2 1/3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1 cup white chocolate chips

Preheat oven to 350 degrees. Lightly grease two cookies sheets. With an electric mixer, blend sugar and butter in a large bowl until thoroughly mixed. Add egg, vanilla, and pumpkin, beating well. Stir together flour, baking soda, baking powder, nutmeg, cinnamon and ginger in a separate bowl. Add to sugar and butter mixture and blend well. Stir in white chocolate chips. Use tablespoon to round off each cookie and place about 1 1/2 inches apart on cookie sheets. Bake about 17 minutes, or until golden around edges. Remove and cool on wire racks.
Notes: Drizzle with white chocolate icing if desired.
