White Chocolate Peanut Butter Chip Caramel Apples

These caramel apples are dipped in a layer of homemade caramel then dipped in melted peanut butter chips and finally drizzled with dark chocolates.
 

Ingredients

  • 1/2 tablespoon butter
  • 14 medium sized apples
  • 1 cup butter
  • 1 16 ounce package brown sugar
  • 2 cups half-and-half
  • 1 cup light corn syrup
  • 1 teaspoon vanilla
  • 1 cup peanut butter chips
  • 1 cup white chocolate chips
  • 14 ounces dark chocolate candy coating chips or wafers

Method

Butter a large baking sheet with 1/2 tablespoon butter. Wash, dry and de-stem apples. Insert a wooden skewer into the stem end of each apple. Place on buttered sheet. In heavy 3 quart saucepan, melt 1 cup butter over medium-low heat. Add brown sugar, half-and-half and corn syrup. Stir and cook over medium-high until mixture comes to a boil. Reduce heat to medium and clip a candy thermometer to the side of the pan. Boil, stirring frequently, until thermometer registers 248 degrees or firm ball stage. This should take around 50 minutes. Remove saucepan from heat and detach thermometer. Stir in vanilla. Dip each apple into hot caramel mixture, turning to coat. Place on sheet. Combine peanut butter chips and white chocolate chips in a small bowl. Dip each apple into the chip mixture. Place on sheet. Melt candy coating chips on top of double boiler until smooth. Pour melted dark chocolate into a clean plastic squeeze bottle. Drizzle chocolate over each apple. Allow apples to set so that chocolate can firm. Apples may be refrigerated if desired.
