Spooky Pumpkin Soup

Sherry and tarragon flavor this pumpkin soup. Cream, broth, and mushrooms add richness and great flavor.
Ingredients
- Hearty Pumpkin Soup
- 2 tablespoons butter or margarine
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1 1/2 cups sliced mushrooms
- 2 cups chicken broth
- 1/2 cup uncooked rice
- 1/2 teaspoon salt
- 1/2 teaspoon dried tarragon
- 15 ounce can pumpkin
- 2 cups half & half
- 1/3 cup dry sherry

Method
In medium saucepan, saute onion and celery in butter. Add mushrooms, broth, rice & seasonings. Bring to a boil, reduce heat; cover and simmer 20 minutes or until rice is cooked. Stir in pumpkin; continue cooking for 5 minutes. Stir in remaining ingredients; heat thoroughly. Serves 4.
Notes: The tarragon and sherry give this soup a very unique and mature flavor. It's not sweet by any means.
