Spooky Hamburger Soup

Top this soup with spooky Halloween shapes for a fun crouton. Kids will love the combination of ground beef, tomatoes, baby carrots, and corn.
 

Ingredients

  • 4 flour tortillas
  • 2 Tbsp. vegetable oil
  • 1/2 tsp. garlic salt
  • 1 pound ground beef
  • 2 (14 oz) cans beef broth
  • 2 cups water
  • 1 (28 oz) can diced tomatoes, undrained
  • 3 stalks celery chopped
  • 1 cup baby carrots
  • 1 large onion, chopped
  • 1 large green sweet pepper, chopped
  • 1 (12 oz) can whole kernel corn, drained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 Tbsp. garlic powder
  • 2 tsp. chili powder
  • 1 tsp. ground cumin
  • 1 Tbsp. dried oregeno
  • 2 tsp. dried parsley
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 cup shredded cheddar cheese

Method

Using sharp cookie cutters cut spooky shape (pumpkins, bats, cats) from tortillas. Brush shapes with vegetable oil, sprinkle with garlic salt and broil on cookie sheet 1-2 minutes each side until crisp. Set aside spooky shapes. In large kettle brown ground beef and drain. Add broth, water, tomatoes, celery, carrots, onion, green pepper, corn, black beans, garlic powder, chili powder, cumin, oregano, parsley, salt and pepper. Bring to a boil. Reduce heat and simmer 30 minutes. Ladle soup into bowls and float spooky shapes atop. Sprinkle with cheddar cheese and serve.
