Easy, hearty and perfect for autumn. The pumpkin and chipotle add an extra depth of flavor to this quick-to-fix tortilla soup.
Heat oil in large saucepan over medium-high heat.
Cook onion and garlic until tender. Stir in cumin and cook 30 seconds. Stir in pumpkin.
Add tomatoes, chipotle, and broth and bring to a boil.
Reduce heat and simmer 20 minutes. Stir in cilantro.
To serve, divide soup among bowls and top with cheese and tortilla chips. Garnish with a dollop of crema and sprinkle with pumpkin seeds and cilantro.
