Spiced Pumpkin Cobbler

A blend of pumpkin, evaporated milk, eggs, sugar, spices, and flavorings is poured into a 13x9-inch dish, then topped with dry cake mix, butter and pecans before baking.
Ingredients
- 1 15-oz can pumpkin
- 1 12-oz can evaporated milk
- 3 eggs, beaten
- 1 cup sugar
- 4 tsp pumpkin pie spice or a mix of cinnamon, nutmeg, ginger and cloves
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 tsp almond extract
- 1 box yellow cake mix (dry)
- 3/4 cup melted butter
- 1 1/2 cups chopped pecans
- Vanilla ice cream (optional)

Method
In a large bowl, combine first 8 ingredients with a wire whisk. Pour pumpkin mixture into a greased 9x13-inch baking dish or pan. Sprinkle dry cake mix on top and drizzle melted butter on top of cake mix. Sprinkle with pecans; bake at 350 degrees for 1 hour or until toothpick comes out clean. Best served warm with vanilla ice cream.
