Sister Sarah's Chicken Pumpkin Stew


Cubes of chicken breast and pumpkin (or squash) are cooked in broth with veggies, then thickened slightly and flavored lightly with peanut butter.



Ingredients:

  • 1 tablespoon olive or canola oil
  • 1 1/2 lbs. skinless, boneless chicken breasts, cut in 1-inch pieces
  • 1 large onion, chopped
  • 1 red bell pepper, cut in 1-inch pieces
  • 1 teaspoon garlic, minced
  • 1 14 ounce can chicken broth
  • 1 14 ounce can diced tomatoes
  • 1 tablespoon paprika
  • 1/2 teaspoon salt
  • 3 cups peeled sugar pumpkin or butternut squash cut in 1-inch cubes (about 1 pound)
  • 8 ounces fresh green beans, cut in half
  • 1 tablespoon cornstarch
  • 1/4 cup creamy peanut butter

Method

Heat oil in large saucepan or saucepot over medium heat. Add chicken; saute just until browned. Remove to a plate. Add onion, pepper and garlic; saute until softened. Add 1 1/2 cups of the broth, the tomatoes, paprika and salt. Bring to a boil; add chicken, pumpkin and beans. Reduce heat, cover and simmer 12 minutes, or until chicken and pumpkin are tender. Meanwhile stir together the remaining broth, the cornstarch and peanut butter in a bowl until smooth. Add to pot. Cook and stir for 2 minutes or until thickened and bubbly.
