Pumpkin Patch "Cupcake" Burgers


These adorable pumpkin shaped "hamburgers" are made with boxed cake mixes and a variety of colored icings.



Ingredients:

  • Buns:
  • 1 box Pillsbury Classic White Cake Mix
  • 1 cup water
  • 1/3 cup oil
  • Wilton orange food coloring gel
  • Hamburgers:
  • 1 box Pillsbury Chocolate Cake Mix
  • 1 1/4 cup water
  • 1/3 cup oil
  • 3 eggs
  • Condiments:
  • 1/2 cup Crisco solid shortening
  • 1/2 cup margarine
  • 1 teaspoon vanilla
  • 4 cups confectioner sugar
  • 2 Tablespoons milk
  • Green food coloring
  • Halloween party toothpicks

Method

Preheat oven to 350 degrees. In a mixing bowl prepare the white cake mix as directed on the box. Add a small amount of the orange food coloring gel to make orange batter. Spray muffin pans with Pam for baking. Fill each muffin cup halfway or a little less with batter. Bake until done, about 13-15 minutes, or when toothpick comes out clean when inserted in the middle. Let cool 5 minutes in pan then remove to a cooling rack. When the orange cupcakes are finished, prepare the chocolate cake mix as directed on the box. Spray muffin pans with Pam for baking. Fill cups with only 1 tablespoon of the batter. Bake about 8 minutes until cake is done. Cool in pan 3-4 minutes then remove to a cooling rack. Make the same number of chocolate "hamburgers" as you have orange "buns". To prepare the frosting, cream Crisco and margarine in a large mixing bowl. Beat in vanilla, then add confectioner's sugar one cup at a time. Beat well after each addition. Scrape sides of bowl frequently. Add milk and beat well. Divide icing and add food coloring. Make one bowl green for lettuce. Add yellow to a small bowl of icing to make cheese. To assemble the burgers, cut an orange cupcake in half, spread green icing on the bottom half. Place some icing in a pastry bag and using a star tip, scallop the edges to look like lettuce. Set the "bun" on a white or halloween cupcake paper. Frost the top of a chocolate cake with the yellow to look like cheese. Set this chocolate cake on the "lettuce", top with the other half of the orange cupcake. Place a party toothpick into the cupcake. May also make a pumpkin stem with the green icing on the top of bun. These will look like minature hamburger pumpkins.

Notes: These are so cute. My grandchildren and the neighbor kids really thought they were great. They make a really pretty display at a party and aren't nearly as hard to make as the recipe may sound.
