Pumpkin Oatmeal Cookies

Celebrate fall with plain pumpkins or turn these easy oatmeal cookies into jack-o-lanterns with pieces of candy.Ingredients
- 2 cups flour
- 1 cups oats (uncooked)
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 cup butter, softened
- 1 cup packed brown sugar
- 1 cup granulated sugar
- 1 egg, slightly beaten
- 1 tsp vanilla
- 1 cup pumpkin

Method
Heat oven to 350 F. Mix flour, oats, soda, cinnamon, and salt. In a large bowl, cream butter and sugars, beating till fluffy. Add egg and vanilla, mix well. Add dry ingredients alternately with pumpkin, mix well after each addition. Drop 1/4 cup dough onto lightly greased cookie sheet; spread into pumpkin shape with thin metal spatula. Add a bit more to make stem. Repeat till sheet is full. Bake 20-25 minutes, till cookies are firm and lightly browned. Remove from cookie sheets, cool on wire racks. Decorate with icing and candies to make jack o lantern faces (if desired).
