Pumpkin Curry

A creamy, seasoned pumpkin and tomato puree served with a mix of vegetables--very healthy.
Ingredients
- 1 1/2 cups pumpkin
- 2 large tomatoes
- 1/2 cup onions, chopped
- 1/2 tsp red chili powder
- 1/4 tsp turmeric powder
- 1 tbsp ground coriander
- 1 tsp garam masala
- 3/4 cup low fat curd (cottage cheese)
- 2 tbsp chopped coriander
- Salt to taste
- Mixed vegetables

Method
Put chopped pumpkin in water and cook it. When cooked, blend it into a puree. Put whole tomatoes in water and heat for 10 minutes. After cooling, remove skins and blend tomatoes into a puree. Fry onions in 1/2 tsp oil until brown. Add all seasonings except coriander. Add purees, curd, vegetables, salt and cook for 8-10 minutes. Add coriander leaves, mix well, boil once. Serve hot.
