Orange Pumpkin Cake

Canned pumpkin is used to fix up yellow cake mix in this recipe. Cinnamon, nutmeg, allspice and orange juice also flavor the cake.
 

Ingredients

  • Cake:
  • 1 (18.25 ounce) box yellow cake mix
  • 3 egg whites
  • 1 1/4 cups canned pumpkin
  • 1 cup orange juice
  • 1/3 cup dairy sour cream
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • Glaze:
  • 1 1/2 cups powdered sugar
  • 1/4 teaspoon vanilla extract

Method

Preheat oven to 350 degrees F. Mix together all the cake ingredients for 2-3 minutes. Pour into a greased 10-inch fluted tube pan. Bake 35 to 40 minutes or until done. Cool 10 minutes in pan on a wire rack. Remove from pan. Mix powdered sugar and vanilla extract. Gradually add water, a tablespoon at a time, until it reaches desired consistency and drizzle over cake. Cool.
