Jalapeno Pumpkin Apple Salsa

I make jalapeno pumpkin salsa every fall when the garden is ready to harvest. The salsa is good served as a warm topping for baked pudding. My girls like it cold on toasted English muffins. It has become a Halloween breakfast tradition.

1 cup Chopped Fresh Pumpkin
1 Sweet Apple, cored and diced (gala, fuji, winesap, or mcintosh suggested
1 Small Onion, diced
2 Tbsp Butter
½ cup Orange Marmalade
½ cup 7-up, not diet
2 tsp Pumpkin Pie Spice
½ cup Brown Sugar
2 Jalapenos, seeded and minced
4 English Muffins, halved


Put pumpkin, apple, onion, butter, orange marmalade, 7-up, pumpkin pie spice, brown sugar, and jalapeno chilies in a heavy saucepan. Bring to a boil and simmer about 30 minutes until liquid is nearly evaporated, stirring often. Toast muffins and serve with salsa. Can be served warm or chilled.
