Ingredients:
| 1 cup | Chopped Fresh Pumpkin |
| 1 | Sweet Apple, cored and diced (gala, fuji, winesap, or mcintosh suggested |
| 1 | Small Onion, diced |
| 2 Tbsp | Butter |
| ½ cup | Orange Marmalade |
| ½ cup | 7-up, not diet |
| 2 tsp | Pumpkin Pie Spice |
| ½ cup | Brown Sugar |
| 2 | Jalapenos, seeded and minced |
| 4 | English Muffins, halved |
Directions:
Put pumpkin, apple, onion, butter, orange marmalade, 7-up, pumpkin pie spice, brown sugar, and jalapeno chilies in a heavy saucepan. Bring to a boil and simmer about 30 minutes until liquid is nearly evaporated, stirring often. Toast muffins and serve with salsa. Can be served warm or chilled.
