Jack-o-Lantern Muffins

These muffins are a fun way to get children to eat healthy. The wheat germ and soy milk really make a difference in nutrition and calories.
 

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/4 cup wheat germ
  • 1/3 cup sugar
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup oil
  • 1/4 cup soy milk
  • 3/4 teaspoon vanilla
  • 1 cup canned pumpkin

Method

Preheat oven to 350 degrees F. In a large mixing bowl, stir together flour, wheat germ, sugar, cinnamon, baking powder, baking soda and salt. In a medium sized mixing bowl, combine canola oil, soy milk, vanilla and pumpkin. Add wet ingredients to the dry ingredient mixture. Mix until thoroughly combined into a thick batter. Spray Jack-o-Lantern shaped muffin tins with non-stick cooking spray. Fill muffin cups about 1/2 full. Bake for 15 minutes, or until a toothpick inserted comes out clean. Cool for 10 minutes in the pan and transfer to a cooling rack.
