Halloween-y Crostini

This colorful spread of carrots and Kalamata olives, will dress up crostini for your next Halloween party.
Ingredients
- 1 baguette, sliced 1/2 inch thick
- 1/4 cup + 1 tablespoon olive oil
- 1/2 cup pitted Kalamata olives
- 1 Tablespoon capers
- 2 Tablespoons chopped jarred banana pepper rings
- 1 small clove garlic, chopped
- 1 small carrot, peeled and chopped
- 1/4 teaspoon dried oregano

Method
To prepare crostini: Preheat oven to 400 degrees. Place baguette slices in a single layer on a baking sheet. Using a pastry brush, brush lightly with 1/4 cup olive oil. Bake 8 to 10 minutes, until crisp and lightly golden brown. Cool slightly. To prepare carrot-Kalamata spread: Place kalamata olives in a food processor and process until finely chopped, but not pureed. Transfer to a small mixing bowl. Place capers, banana peppers, garlic, and carrot in the food processor and process until finely chopped. Transfer to mixing bowl. Add oregano and 1 tablespoon olive oil to bowl and mix until thoroughly combined. Transfer olive mixture to a nice serving container. Place container in center of a platter, and arrange baguette slices around edges. Provide spreaders for guests to spread mixture on crostini.
Notes: With the vivid black and orange colors of the carrot-kalamata spread, this is a perfect Halloween appetizer.
