Halloween Ravioli

Here frozen ravioli is topped with a creamy, spiced pumpkin sauce. Walnuts and cheese top each serving.
Ingredients
- 2 tsp olive oil
- 2 garlic cloves, minced
- 1/3 cup onion, chopped
- 1 1/2 cups chicken broth, divided
- 1 1/2 cups canned pumpkin
- 1 cup lowfat milk
- 1 tsp sage
- 2 tsp ground cinnamon
- 3 Tbsp. brown sugar
- 1/8 tsp cayenne pepper
- 1/4 tsp black pepper
- 1/2 tsp salt
- Pinch red pepper flakes
- 1/3 cup chopped red sweet pepper
- 1/4 cup walnuts
- 1/4 cup grated Parmesan cheese
- 32 oz frozen desired-flavor ravioli, cooked and drained

Method
In large saucepan, heat olive oil over medium heat. Add garlic and onion and saute until soft, about 4 minutes. Add 1 cup of the chicken broth and all of the pumpkin; stir. Add milk and enough of the remaining chicken broth to reach a sauce-like consistency; cook until heated through. Add sage, cinnamon, brown sugar, cayenne pepper, black pepper, salt, and red pepper flakes. Add chopped sweet pepper and cook briefly until crisp-tender. Top with walnuts and Parmesan cheese and serve over cooked ravioli.
