Halloween Crunch Pumpkin Cake

A rich cake with pumpkin, peanut butter, and chocolate topped with icing, nuts, rice cereal and a drizzle of chocolate and caramel syrup.
 

Ingredients

  • 2 cups boiling eggnog or buttermilk
  • 3 cups cake flour
  • 1 cup pumpkin filling
  • 3/4 cup unsweetened cocoa powder
  • 1 3.4 oz package chocolate pudding
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 2 1/4 cups white sugar
  • 4 eggs
  • 1 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 1 cup chopped nuts, pecans or almonds
  • 1 cup Rice Krispies
  • 1 cup peanut butter chips
  • Chocolate and caramel syrup
  • Chocolate cream frosting, optional:
  • 2 cups butter, softened
  • 9 cups confectioners' sugar
  • 2 1/2 cups baking cocoa
  • 1 teaspoon vanilla extract
  • 1 cup whole milk

Method

Cake: Preheat oven to 350 degrees. Grease three 9 inch round cake pans or one large bundt cake pan. In medium bowl, pour eggnog over cocoa and pudding, whisk until smooth, and let mixture cool. Sift together cake flour, baking soda, baking powder, nutmeg and salt. Add pumpkin filling and mix well then set aside. In a large bowl, cream butter and sugar together until light and fluffy. Beat in eggs, one at a time, and stir in vanilla and almond extract. Add flour mixture alternately with cocoa mixture. Spread batter evenly between the 3 prepared pans or a bundt cake pan. Bake 25-30 minutes then allow to cool. Once cooled, frost cake with Chocolate Cream Frosting and top with nuts and Rice Krispies. Add these toppings to taste. Drizzle cake with chocolate and caramel syrup. Chocolate Cream Frosting: In a large mixing bowl, cream butter. Gradually beat in confectioners' sugar, cocoa and vanilla. Add enough milk until frosting reaches spreading consistency, but do not over mix.

 

Notes: Note: This is a very rich cake, so you will need to coat the cake pans with oil and lightly flour, or use parchment paper to prevent sticking.
