Fall Ravioli

These cheese ravioli are topped with this spiced pumpkin sauce. Top with Parmesan and walnuts.
Ingredients
- 2 tsp olive oil
- 2 garlic cloves, minced
- 1/2 cup onion, chopped
- 1/3 cup red sweet pepper, chopped
- 1 cup chicken broth
- 1 cup canned pumpkin
- 1/2 cup fat-free milk
- 1 tsp dried sage
- 2 tsp ground cinnamon
- 2 Tbsp. packed brown sugar
- 1/8 tsp. cayenne pepper
- 1/4 tsp. ground black pepper
- 1/2 tsp. salt
- 30 oz cheese ravioli, cooked and drained

Method
In large saucepan, heat olive oil over medium heat. Add garlic and onion and saute two minutes. Add sweet pepper and saute until soft, about 4 minutes. Add the chicken broth and the pumpkin; stir. Add milk and stir to reach a sauce-like consistency; cook until heated through. Add sage, cinnamon, brown sugar, cayenne pepper, black pepper, and salt. Top with walnuts and Parmesan cheese and serve over cooked ravioli.
