'Deli in the Hay' Halloween Sandwiches

This clever recipe will be a great addition to your Halloween party.
 

Ingredients

  • DELI:
  • 1 lb thin sliced deli Swiss cheese
  • 1 lb thin sliced deli Roast beef
  • 1 lb thin sliced deli Turkey breast
  • HAY INGREDIENTS:
  • 1 lb bag sauerkraut, rinsed, drained and pressed dry
  • Scant tsp celery seed
  • 1/2 tsp prepared horseradish
  • 1 Tbsp mayonnaise
  • 1 Tbsp dijon mustard
  • Orange food coloring
  • ROLL INGREDIENTS:
  • 2 packages Finger Rolls, split
  • OPTIONAL: Deli Presentation Relish
  • 1/2 of 1 small pumpkin, hollowed out, for serving vessel.
  • 2 deli pickles (half-sour or dilled), chopped
  • 1 jar cocktail onions, drained and sliver-cut
  • 1/2 cup red onion, chopped
  • 1 cup cured Greek olives, chopped
  • Splash of red wine vinegar
  • Splash of olive oil
  • Dash salt
  • 1/2 tsp freshly ground black pepper

Method

Place Swiss cheese slices on cutting board until board is completely covered in a single layer. Spray top of cheese slices with a thin film of olive oil. Top cheese with a single layer of roast beef and spray with oil. Top the roast beef with turkey but do not spray turkey top with oil. Using a sharp chef's knife, cut through the deli stack making 1 inch strips. Turn board 180 degrees and cut deli stack into finger roll lengths so deli mixture fits into rolls. Transfer deli mixture to bowl and toss together. If necessary, spray with oil in small increments, just enough so ingredients don't stick together. Mix all Hay ingredients together until well blended; Hay should be on the dry side. Add orange food coloring, drop by drop, until sauerkraut mixture resembles the color of hay. Split rolls. Using a butter knife, layer each roll with sauerkraut Hay. Top Hay with deli mixture and serve, with or without Deli Presentation Recipe. Mix all ingredients together and spoon into hollowed out pumpkin. Put a spooky spoon in relish and serve with sandwiches.

 

Notes: Finger Rolls lined with sauerkraut ?hay? beneath a deli bed of beef, turkey and Swiss. Easy to prepare in four simple steps: (1) split rolls (2) mix the Hay (3) cut the Deli, (4) Build and Serve. Sandwiches are excellent, with or without the Deli Presentation
